About this Class

I taught Rachel how to make miso many years ago on her birthday, in February, which is the time of year my family make miso together. Join us to recreate the winter tradition of making miso as a community. Miso and koji both bring an Umami flavour to dishes, that give many Japanese recipes their unique flavour.

You’ll make two different styles of miso to take home and Rachel will show you creative ways to incorporate miso into meals, whilst talking about the health benefits of using miso and how to make the most of its health qualities. Alongside this, we’ll make and cook with four different types of koji. 

Learn about Miso traditions in Japan while we explore ancient techniques using the best local ingredients. You’ll also learn about the magic of koji, which is used to make miso, exploring different methods and techniques.

You’ll then learn how to use miso for health in creative, delicious and very simple recipe that deliver complex and exciting flavours. We’ll also look at the nourishing qualities of miso and how to prepare it in a way that maximises the benefits and flavours.
