AUBERGINE SOBA NOODLE SOUP
I’m delighted to be partnering with Yakult again, into 2021, to bring you a fresh series of cookalongs, for more Japanese cooking at home.
To make this delicious vegetarian noodle soup, with a distinctive aubergine topping, we’ll start by making a simple Kombu & Shitake Dashi. Dashi means stock and it is the foundation for many Japanese dishes. Then we’ll focus on the Aubergine Nibidashi. Finally we’ll cook the Soba noodles and bring the dish together for serving.
