On the last night of September, I collaborated with my two passionate South American friends Antonia and Fabricio and a special Japanese Peruvian dinner took place at the School of Wok in central London. We prepared Japanese chicken dumplings for the starter, accompanied by a fiery salsa; closely followed by a ceviche temaki sushi, light and tasty. These photos capture some of the action from the night, the kitchen was buzzing with activity and the diners loved the introductions (and surely the dishes too!) as we introduced each course.
For the main course, we served marinated pork belly chicharron with spicy mint miso and sweet potato puree, alongside a quinoa and edamame salad with chilli salsa. The school is a wonderful intimate location for a dinner like this, with all guests seated closely around one table. It was fun to serve one course that required crowd participation, the whole room rolled their hand-rolled Temaki at the same time and everyone got it right first time!
